Since actual oven temperatures vary, we always suggest an oven thermometer be used.
Heating Instructions for Prepared Trays
All prepared entrees require a pre-heated oven temperature of 350 degrees. All entrees that have a cheese topping such as baked ziti, eggplant, and other parmigiana dishes, to name a few, should have a loosened lid to prevent melted cheese from sticking to it. All other dishes can remain sealed. Heating time is 40 minutes for a half size pan, 45-50 minutes for a full size pan. Check center for consistency. Cooking time for convection ovens will vary. It is recommended that the tray be taken out of the refrigerator 30 minutes prior to heating.
Cooking Instructions
Porchetta or Roast of Pork:
Pre-heated 350 degree oven. 20 minutes per pound or until internal temperature reaches 155 degrees.
Beef Tenderloin or Filet Mignon:
Pre-heated 425 degree oven. Cook for approx. 12 minutes per pound. Internal temperature should be 140 degrees for rare,
150 for medium.
Veal Roast:
Pre-heated 350 degree oven. 20 minutes per pound or until internal temperature reaches 140 degrees.
Prime Rib Roast (Bone in or Out):
Pre-heated 350 degree oven. 20 minutes per pound or until internal temperature reaches 140 degrees for rare, 150 for medium.
Lamb Roast, Leg of Lamb:
Pre-heated 350 degree oven. 20 minutes per pound or until internal temperature reaches 160 degrees.
Rack of Lamb:
Pre-heated 375 degree oven. 40 minutes or until internal temperature reaches 160 degrees.
A&S Chicken Cordon Bleu:
Pre-heated 350 degree oven. 35-40 minutes add butter & white wine internal temperature should be 165 degrees.
Turkey Roast:
Pre-heated 350 degree oven. 50-55 minutes. Marinate occasionally. Internal Temperature should be 160 degrees.
Grilling Instructions
Flank Steak Pinwheels:
Approximately 5 minutes each side.
Turkey London Broil:
Cook in an oven proof pan or skillet on the grill for 5-7 minutes. Remove turkey from the pan and place directly on the grill for an additional 4-5 minutes per side. Internal temperature should be 165 degrees.
Steaks (NY Strip, Porterhouse, T-Bone):
Remove steaks from refrigerator prior to grilling bring to room temperature. Season as desired – Try our Rubs!
